Hi, I’m a blogger and I’m about to share with you a recipe – one of our favorites from the archives… but first, I want you to read my short story. Don’t want to read the story? Click the convenient ‘Take me to the recipe’ link at the top of the page… you’re welcome 😉 BUT you may want to read my story… could save you $50 on an AMAZING service you never knew you needed…

You’re like me. You HATE grocery shopping… You love yummy recipes and playing in the kitchen, but when you think about having to actually SHOP for, SEARCH for, and STAY FOCUSED long enough to find all the things on your list, you get frantic and frustrated, often resulting in not bringing home what you actually needed in your grocery haul.
Shipt just got real
Have you met Shipt?!? If not, I’m about to blow your minds, folks… My dear friend, Michelle, recently purchased her very own year subscription to the service, which gave her another for free (for me!) – shout out to Cyber Monday deals! Well, we just recently used it for the first time and HOLY SMOKES. The efficiency, the time saving, and the stress avoiding that came with my groceries being delivered by sweet Lori from Shipt was a total lifesaver on a busy Sunday.
With Shipt, you pay for a year membership subscription, usually $99, which gives you access to their shoppers and delivery of your groceries. Local to me we have Publix, Harris Teeter, Target, and Lowe’s Foods available as retailers with free shipping/delivery on orders over $35. (Side Note, Target bought Shipt, so there’s no slight up-charge on item pricing) I placed my order in the app, selected my delivery window, and Lori did the rest! She even texted me when she was initiating my shopping, if she was unable to find a specific item on my list, and when she was on the way! Lori, boo, you ROCK!
PLUS, when she got to my house, she even offered to bring the groceries inside! If Sully hadn’t been out, I totally would have taken her up on that offer, being ‘waddle-sized’ pregnant currently.
Another thing I HAVE to gush about is that when I notice we are out of something around the house, all I do is pull up my Shipt app, add the item to cart, and IT SAVES IT! Currently rocking out to about 63 items in my Target cart for my next order lol. Talk about planning ahead while you can!
Shipt is a savior for mamas and mamas to be
That header says it all. ALL OF IT. Ya’ll. Picture this: you’re a WRECK. Baby didn’t sleep a wink, mama hasn’t showered in 2 days – going on day 5 of attempting that dry shampoo life, dad is working, YOU’RE OUT OF DIAPERS…
GET SHIPT NOW. Avoid this. You don’t have to go out of the house… break into your back up diapers in the car in the mean time, put in an order with Shipt, and get someone to bring them to you!
I’m not a Shipt affiliate, but if you are so inclined to purchase a membership with Shipt, you can do so for ONLY $49 (regularly $100) using my link HERE & below. Once you place your first order with Shipt, I will receive a $50 credit onto my Shipt account.
Save $50 on a year’s membership to Shipt
Now, without further ado, read on for my stuffed peppers recipe, and maybe add the items you need to make it to your Shipt cart so you can make them tonight!
Clean Stuffed Peppers
Personally, I think bell peppers are the most inventive vessel for dirty ‘rice’, ever, in the history of mankind. Ok, maybe I’m over exaggerating with that, but they’re pretty awesome! It’s like a cute little edible bowl! Typically, you see recipes of stuffed peppers including white or brown rice or quinoa, but as we all know, rice isn’t Paleo and cutting it out just leaves something to be desired in this recipe. A great replacement is the wonderful cauliflower rice! Grab a head of cauliflower, chop it into florets, then run them thru your food processor with the ricer blade. OR, if you’re like me and don’t have a food processor yet (where the heck would I store it?!? lol), but do have a slap chop, slap chop away until the pieces are small and resemble rice! ?now that we’ve established how to get our ‘rice’ prepped, and the dog has been let into the kitchen to clean up the inevitable cauliflower mess on the floor, you probably want the recipe, huh?

Clean Stuffed Peppers Recipe (Whole30, Paleo, Keto, Clean)
Clean Stuffed Peppers, Whole 30 Approved
Ingredients
3 large red bell peppers, halved, ribs & seeds removed;
1 head cauliflower, riced;1 cup mushrooms, diced;
1 medium yellow onion, diced;
1 green pepper, diced;
1 lb ground bison (or beef of choice);
3 cloves garlic, smashed and diced;
2 eggs, beaten;
1 TBS cumin;
1/2 TBS paprika;
1 tsp cayenne/red pepper flakes (to taste);
4 TBS coconut oil or ghee;
Chipotle Mayo(for garnish)
Directions
1. Preheat oven to 400 degrees Fahrenheit.;
2. Melt 2 TBS coconut oil or ghee in a medium skillet. Cook cauli rice until tender. Turn burner off once rice is cooked.;
3. In a separate large skillet, melt the other 2 TBS oil of choice and sauté the vegetables. Once veggies are 3/4 way sauted, add your ground meat of choice and cook until no pink remains. Once meat is cooked, add spices, then rice. Combine well.;
4. In a 9×13 baking dish, lay parchment paper on the bottom and arrange the red peppers open side up.;
5. Add the beaten eggs to the rice veggie and meat concoction and stir in until you can no longer see the egg. Be careful that the mixture is not too hot so that the eggs cook in the skillet- they will cook in the oven!;
6. Stuff the peppers!;
7. Next, place your stuffed peppers in the oven and bake for 25-35 minutes or until the peppers are soft.;
8. Allow to cool before serving. Top with chipotle mayo and mangia!

Paprika Lime Roasted Sweet Potatoes Recipe
Need a side to go along with your stuffed peppers? We ate ours with a side of paprika lime roasted sweet potatoes which were super easy and cooked right alongside the peppers!
Peel and chop 2 medium sweet potatoes, throw them in a bowl, drizzle oil of choice over potatoes, add salt, pepper, paprika, and juice of half a lime. Stir to combine and coat all potatoes. Place potatoes on a parchment lined baking sheet and bake at 400 degrees for 25-35 minutes!

I can’t wait to make this again and re take this picture!

This looks delicious. My dad made the best stuffed peppers, but he was a southern cook, so I can imagine they were not whole 30 approved. This looks like a fantastic alternative.
PS: my friend uses shipt and absolutely loves it. I actually enjoy going to the grocery store:)
LOL! I bet your dad’s stuffed peppers were BOMB! Southern recipes are amazing. OMG you are a rare breed that loves shopping at the grocery store! Teach me to love it!
Seriously, as long as my kids aren’t with me, I love it!

I have never had stuffed peppers with cauliflower rice. Sounds kinda good actually. I will have to pin this for later. Honestly what sounded really good was your side recommendation of the sweet potatoes. I love mixing it up with different flavors. Thanks for sharing!
The cauliflower rice addition actually keeps it rather light but still filling – I can’t wait to hear what you think of it and so glad you loved the side idea! Keeping it fresh with some different ways to cook sweet tatoes! 🙂
Stuffed peppers are my fave! And these look delicious! Now it’s 7AM and I’m starving..haha

I hope you love it! thanks for stopping by! 🙂
I can’t wait to experiment with this recipe! I would have never thought to substitute traditional rice with something like cauliflower rice. Definitely going to try that the next time I make stuffed peppers.
I love traditional rice, but sometimes it sits so heavy on our stomachs. Can’t wait to hear what you think if you try this recipe!
Oh these look amazing!! Stuffed peppers are the best.
Thanks so much! They are a definite household favorite!!
