This recipe is my absolute favorite for days that we want something gourmet but don’t have the time (the energy) to prepare something fabulous. The bonus that this is gluten-free, dairy-free, AND paleo compliant, is the cherry on top, thanks in part to Otto’s Cassava Flour! Paleo Italians, rejoice! the sky’s the limit and I have the answer to your wildest recipe dreams! Imagine a Riccota gnocchi with Otto’s! *drool*
Otto’s Cassava Flour
I’ve written before about my love and utilization of Otto’s Cassava Flour, so if you’re just now hearing about it, get ready boo! Otto’s Cassava Flour is a life saver for everyone paleo/gluten-free! I have tried countless gluten-free flour, but none match up to the consistency and taste that Otto’s has to offer. Cassava, a root vegetable, in flour form allows for a very comparable consistency to regular wheat flour, without the implications wheat has to those that cannot eat gluten. I have found through my utilization of Otto’s that their flour subs 1:1 in most recipes! For people that don’t like math, this is a HUGE pro! (Click here to snag some for yourself.)
I first learned of Otto’s when making John and my wedding cake (yes, I made our cake!) In 2015. I had high hopes for being able to create and bake a gluten free, as close to paleo, wedding cake that I could so that my new husband could enjoy the evening without worrying about the repercussions of indulging in glutenous wedding cake. Well, friends, I succeeded!

Recently, Otto’s gave my Zuppa Toscana recipe a shoutout on Instagram, and I was so excited! I messaged them to thank them and they sent me a refill bag of Cassava Flour for free! Thank you so much , Otto’s! I have always loved your flour, and I can’t wait to continue to create new recipes and paleo-ify some old school favorite recipes with it!
Without further ado, here’s my Zuppa Toscana Recipe!
[lt_recipe name=”Zuppa Toscana {Paleo, Gluten-Free, Dairy-Free}” servings=”8″ prep_time=”30M” cook_time=”4-6H” total_time=”6H30M” difficulty=”Easy” summary=”Savory, clean Italian soup” print=”yes” ingredients=”1# Hot Sausage;1 White Onion, diced;1.5# Potatoes of choice, diced;6 Garlic Cloves, diced;1/2 Bunch kale, chopped;4 Cups Chicken Broth;1 Cans Full-Fat Coconut Milk;1/3-2/3 Cup Otto’s Cassava Flour ;Italian Seasoning ;Salt & Pepper to taste” ]1. Dice potatoes, onion, garlic and combine with chicken broth in Slow Cooker. Add seasonings as well.;2. Add 1/2 Can Coconut Milk to Slow Cooker.;3. Chop Kale and place in bag, store in refrigerator for later.;4. Brown sausage in skillet then add sausage to Slow Cooker.;5. In the dirty sausage skillet, over medium heat, add the other 1/2 can of Coconut milk. Combine 1/3-2/3 cups of Otto’s Cassava flour and continue to stir until well combined. The coconut milk will thicken.;6. Once coconut milk and cassava flour mix are combined and thickened, add to crock pot and stir.;7. Set Slow Cooker on medium heat for 4-6 hours (or low for 8H).;8. 30 minutes prior to serving, add chopped kale to the slow cooker to wilt. ;9. Serve warm. Enjoy!
